Chicken poached in a crockery pot is the best ever. Whenever possible, poach an extra one to use in cool supper salads, lovely crepes, enchiladas and other casseroles. The following is the basic poaching method. Cooking time will be the same even when the recipe is doubled. A 4 1/2 quart crock pot will accommodate two whole 3 pound chickens nicely.
